The Bijou is a classic, spirit-forward cocktail, think of it as a herbal, richer cousin to the Martini/Negroni family. Profile: * Herbal, complex, slightly sweet, with a strong botanical punch Origin: * Late 1800s (Harry Johnson) * “Bijou” = “jewel” in French: gin (diamond), vermouth (ruby), Chartreuse (emerald) The original equal-parts version (30/30/30) is much heavier and more Chartreuse-forward.
