Contribution is selling price minus ingredient cost. It is not net profit: labour, waste, tax and overheads still matter.

Calculate the cost of each ingredient

Divide a bottle’s price by its usable volume, then multiply by the amount in your recipe. For example, a £28 bottle containing 700 ml costs £2 for a 50 ml measure. Add all ingredient costs to find the drink’s total.

Pour cost, clearly explained

Pour cost is ingredient cost divided by selling price, multiplied by 100. A drink that costs £2.40 and sells for £9.60 has a 25% pour cost. Keep both figures on the same tax basis.

Margin is not markup

A £2.40 ingredient cost and £9.60 selling price leave £7.20 before other costs: a 75% margin on selling price. Markup divides that difference by ingredient cost instead. These are different measures.
